SUPER YUMMY VEGAN BROWNIE RECIPE

If you follow me on Instagram you may have seen me raaave about healthy baking, I am definitely no expert healthy baker (beau will second that) but I love to make a batch of something healthy for the week for when I’m feeling like a treat.


Lately I have an obsession with brownie!


I’ve made a bunch of different batches with different ingredients to try and get the consistency and flavor closest to like.. normal brownie and this recipe is just that!!





INGREDIENTS


Dry ingredients

  • 1 cup oat flour - I use wheat free oats and blend them into oat flour. I find with my gluten intolerance the wheat free oats are the best ones for me

  • Sprinkle of Himalayan rock salt

  • ½ teaspoon baking powder

  • ½ cup cacao powder

  • 2 TBSP coconut sugar

Wet ingredients

  • 3 medium to large ripe bananas

  • ¼ cup almond milk

  • 1 tsp vanilla essence

  • ¼ cup honey (or brown rice syrup, I prefer honey as it is sweeter)

  • 2 TBSP melted coconut oil (melted)

  • ¼ cup smooth peanut butter (to be swirled into mixture at the end)

Optional: add ½ cup vegan chocolate chips or ½ cup walnuts into the mixture. I personally love walnut


INSTRUCTIONS

  1. Preheat oven to 180.

  2. Line baking tray with baking paper.

  3. Blend oats to make oat flour.

  4. Transfer oats into a baking bowl and combine all dry ingredients.

  5. Set aside dry ingredients

  6. Blend ripened bananas, vanilla, coconut oil, almond milk and honey until smooth and creamy (you can add peanut butter here also if you would prefer that to swirling it in).

  7. Add blended wet ingredients to bowl of dry ingredients.

  8. Mix ingredients well until combined. Fold in the optional vegan chocolate or selected nuts.

  9. Tip mixture into lined baking tray.

  10. Tip the soft peanut butter into the tray with the brownie, using a skewer swirl the peanut butter around the brownie evenly (obviously an optional step but I 100000% recommend).

  11. Bake for 15-25 minutes or until a knife comes out clean.






I have also topped the brownie with coconut chips blended to form a fine, sweet powder before and I rate this If you want some other kind of topping!
